Thai Turkey and Carrot Noodle Bowl

Ingredients:
  • 1 tbsp coconut oil
  • 1 1/2 pounds ground turkey, chicken, pork, or beef
  • 1 tbsp minced fresh ginger
  • 2 cloves garlic, minced
  • 2 tsp coconut aminos
  • 1/4 tsp crushed red peppers
  • 3 cups Whole30-compliant chicken broth
  • 4 cups spiralized carrots
  • 1 can Whole30-compliant coconut milk
  • 1/4 cup fresh chopped cilantro
  • 1 lime, quartered
Directions:
  1. In a large skillet, heat oil and cook ground meat until browned, 8 - 10 minutes. Drain off the fat.
  2. In a 4- or 5-quart slow cooker, combine the cooked meat, garlic, ginger, coconut aminos, and red pepper flakes. Add the chicken broth. Cover and cook on low 5 - 6 hours or high 3 hours.
  3. Stir the carrot noodles and coconut milk to crock pot. Turn crock pot to high, cover and cook about 30 minutes.
  4. Top with cilantro and lime wedges, if desired.
Serves 4.
