Thai Turkey and Carrot Noodle Bowl
Ingredients:
- 1 tbsp coconut oil
- 1 1/2 pounds ground turkey, chicken, pork, or beef
- 1 tbsp minced fresh ginger
- 2 cloves garlic, minced
- 2 tsp coconut aminos
- 1/4 tsp crushed red peppers
- 3 cups Whole30-compliant chicken broth
- 4 cups spiralized carrots
- 1 can Whole30-compliant coconut milk
- 1/4 cup fresh chopped cilantro
- 1 lime, quartered
Directions:
- In a large skillet, heat oil and cook ground meat until browned, 8 - 10 minutes. Drain off the fat.
- In a 4- or 5-quart slow cooker, combine the cooked meat, garlic, ginger, coconut aminos, and red pepper flakes. Add the chicken broth. Cover and cook on low 5 - 6 hours or high 3 hours.
- Stir the carrot noodles and coconut milk to crock pot. Turn crock pot to high, cover and cook about 30 minutes.
- Top with cilantro and lime wedges, if desired.
Serves 4.
