Curry Chicken Salad

Ingredients:
  • 1/2 cup compliant or homemade mayo
  • 1 tbsp fresh lime juice
  • 2 tbsp fresh cilantro (optional)
  • 2 tsp compliant curry powder
  • 1/4 tsp salt
  • 2 cups diced or shredded chicken
  • 1/2 medium apple, diced
  • 1 celery stalk, finely diced
  • 3 tbsp finely diced red onion
  • 1/4 cup roughly chopped cashews (I use pecans)
  • Sliced green onions, shredded cabbage, shredded carrots, and/or chopped nuts (optional)
Directions:
  1. In a medium bowl, stir together the mayo, lime juice, cilantro, curry powder, and salt.
  2. Add the chicken, apple, celery, and onion and toss to coat.
  3. Fold in nuts, green onions, cabbage, carrots, if desired.
