Julie Pacheco's Mexican Lentil Skillet


Ingredients:

  • 1 cup lentils, rinsed
  • 1/2 white onion, diced
  • 1 large sweet potato, peeled and diced
  • 1 tbsp oil
  • 1 tbsp minced garlic
  • 1 tbsp tomato paste
  • 1.5 tbsp taco seasoning
  • 15 oz can diced tomatoes
  • 15 oz can black beans
  • 15 oz can corn (or scant 2 cups frozen)
  • 3 cups veggie broth
  • optional: 1 cup cheese
Directions:

  1. Add oil to pan.
  2. Sauté sweet potatoes and onions for 5-7 minutes.
  3. Add garlic and sauté for another few minutes.
  4. Add tomato paste, taco seasoning, tomatoes, black beans, corn, and broth.
  5. Lower heat, cover, and cook for 25-35 minutes or until lentils are soft, stirring often.
  6. Optional: Serve topped with cheese.

Bread Machine Bread - Easy As Can Be


 

Ingredients:

  • 1 cup (227g) lukewarm water
  • 1/3 cup (74g) lukewarm milk
  • 3 tbsp (43g) butter
  • 3.75 cups all purpose flour
  • 3 tbsp (35g) granulated sugar
  • 1.5 tsp (9g) table salt
  • 1.5 tsp active dry yeast or instant yeast
Directions:

  1. Weigh flour.
  2. Add ingredients in order: water, milk, butter, flour, sugar, salt, yeast
  3. Program the machine for basic white bread and hit start.
  4. When the loaf is done, remove pan from machine. Allow to cool at least 5 minutes, then gently shake the pan to dislodge the loaf and allow to cool.

Store, well-wrapped, on the counter for 4 days, or freeze for up to 3 months.

Julie Pacheco's Viral Potato & Lentil Million Dollar Burritos (adapted by me)


Ingredients:

  • 1 tbsp olive oil, plus 1 more tsp at end
  • .5 medium onion, diced
  • 1 tbsp minced garlic
  • .5 pound lentils
  • 1 russet potato, peeled and diced
  • 1 sweet potato, peeled and diced
  • .5 cup of carrots, peeled and diced
  • .25 cup frozen peas
  • Spices to taste, including salt, pepper, onion powder, chili powder, garlic powder, paprika, oregano, etc.
  • 3.5 cups water or broth
  • 10 large wraps or tortillas
Directions:

  1. Add olive oil to pan and heat until shimmering.
  2. Add diced onions and cook for a few minutes.
  3. Rinse the half pound of lentils and add to the pot.
  4. Add potatoes, carrots, and peas to pot.
  5. Add spices and heat to fragrant.
  6. Add broth and cook for 25 minutes.
  7. Fill tortillas and roll up.
  8. Add tsp oil to hot pan and brown all sides of burrito.
  9. Wrap in foil and freeze; heat in over for 1.5 minutes from frozen.

Makes about 10 burritos.
