Slow-Cooker Tex-Mex Chicken

Ingredients:
  • 1# boneless skinless chicken breast, cut into 1" wide strips
  • 2 tbsp taco seasoning
  • 2 bell peppers (red & green), cut into 1" wide strips
  • 2 calabasitas (or zucchini)
  • 1 cup frozen corn
  • 1.5 cups chunky salsa
  • .5 - 1 cup shredded cheese
Directions:
  1. Toss chicken in taco seasoning in slow cooker.
  2. Add all other ingredients.
  3. Cook on low 6 - 8 hours.
