- 1# boneless skinless chicken breast, cut into 1" wide strips
- 2 tbsp taco seasoning
- 2 bell peppers (red & green), cut into 1" wide strips
- 2 calabasitas (or zucchini)
- 1 cup frozen corn
- 1.5 cups chunky salsa
- .5 - 1 cup shredded cheese
- Toss chicken in taco seasoning in slow cooker.
- Add all other ingredients.
- Cook on low 6 - 8 hours.
